Campfire Chili Recipe
• 6 tbsp. Old Boney Mountain Campfire Chili Seasoning blend • ½ cup each Black, Pinto, Kidney, & Great Northern Beans (2 cups total) • 2 lb. trimmed Tri-Tip or favorite meat, cut into ½″ pieces • 2 tbsp. Olive Oil • 28 oz. petite diced Tomatoes • 30 oz. Beef Broth, low sodium • 6 oz. (½ bottle) favorite Beer • 4 Garlic Cloves, minced • 1 Yellow Onion, chopped • 2 Bell Peppers, chopped • 1 Orange Habanero Pepper, minced • 1 Serrano Pepper, minced • 1 Jalapeño Pepper, minced • 1 Anaheim Pepper, minced • 1 bunch fresh Cilantro, chopped *For a mild chili, do not add the Habanero, Serrano, and/or Jalapeño Peppers. **For a vegetarian chili, exclude tri-tip and beef broth; substitute vegetable broth. Bean Preparation: Before cooking, examine, sort, and rinse beans well to remove any residual material, then soak using one of these methods: In a large pot, add beans and cover and 1) let stand overnight, or 2) heat to boiling; boil an additional 5 minutes, let stand for 1 to 4 hours. Directions: Prepare ingredients. Discard soaking water, rinse beans, set aside in bowl, covering beans with fresh water. In large pot, add olive oil, garlic, onions, and meat. Brown meat using medium-high heat. Once browned, stir in spice packet. Add tomatoes, beer, and 8 oz. beef broth. Stir to combine. Add all peppers, remaining beef broth, and beans. Keep at a slow rolling boil for at least 6 hours, stirring occasionally, reducing liquid to desired consistency. If needed, add more water. Add cilantro. Garnish with your favorite cheese, sour cream, and/or chopped onion, if desired. Beans are a natural agricultural product. Despite use of modern cleaning equipment, it is not always possible to remove all foreign material. Sort and rinse beans before cooking. |

"Pay it Forward" allows youth group leaders in your community to make a request for Climbers Challenge 30 Day Devotional for Youth. They will distribute the books to their youth group as well as to individual underprivileged youth. As long as we have the funding, we will send them the books free of charge.
